Bhuni Kaleji Recipe is a typical liver recipe of Uttar Pradesh. Very easy and simple and it takes very less time to cook.


  • Chicken or mutton liver-washed and wiped dry – 500 gm
  • Ginger paste – 1/2 tsp
  • Garlic paste -1/2 tsp
  • Chilli powder – 1/2 tsp
  • Yogurt – 1/4 cup
  • Garam masala – 1/4 tsp
  • Ghee – 2 Tbsp
  • Grated onions – 1/2 cup
  • Coriander leaves and lemon wedges-to garnish – 2 Tbsp
  • Salt to taste


Bhuni Kaleji Recipe Procedure:

  1. In a bowl add chopped liver and mix in the ginger, garlic, chilli powder, yogurt, garam masala, and salt.
  2. Marinate it for half an hour.
  3. In a pan heat the ghee. To this add the onions and saute till golden brown.
  4. Now, add the liver and saute till the fat/ oil separates.
  5. Add 1/2 cup of water and pressure cook(if it is mutton liver) for 5 minutes.
  6. Keep frying till it becomes dry.
  7. Garnish with coriander leaves and lemon.
  8. Tastes ultimate when it is dry.
