Tandoori Chicken | chicken tandoori recipe | Punjabi cuisine

Lip-smacking recipe of Punjabi Tandoori Chicken, try to follow tandoori chicken curry recipe tips given steps below.

Ingredients

  • 8 large Chicken pieces with skin (2 pieces breast, 2 pieces of thighs, a couple of wings)
  • Oil, to baste
  • For the marinade:
  • red chilli paste (4 tsp )
  • ginger and garlic paste (3 Tbsp )
  • chaat masala (2 tsp )
  • masala (1 1/2 tsp)
  • oil (1 Tbsp )
  • curd (3 Tbsp )
  • Salt, to taste
  • Juice of lemon (1/2 lemon)
  • For the tandoori masala:
  • cinnamon (2 sticks )
  • black peppercorns (1 Tbsp )
  • cardamom (5 green )
  • cardamom (3 brown )
  • coriander seeds (2 tsp )
  • cumin seeds (2 tsp )
  • cloves (3 pcs )
  • bay leaf (1 large)
  • turmeric (3/4 tsp )

Tandoori Chicken Process

 

  • For the tandoori masala:
  1. Make small scratches on the chicken pieces for the marinade to coat it nicely.
  2. In a pan dry roast all the whole masala seeds along with bay leaf and turmeric powder.
  3. In a grinder grind the dry roasted spices into a fine powder.
  4. Masala is ready.
  • For the marinade:
  1. In a large bowl add chaat masala, tandoori masala, ginger, and garlic paste, red chili paste, salt , oil, curd and lemon juice. Mix it well.
  2. Apply the marinade on the chicken pieces, over the skin and underneath it. Keep aside this mixture of the chicken pieces for 30 minutes.
  3. Now grill the chicken pieces on a griller or tandoor. Brush the chicken pieces with oil at regular intervals.
  4. Serve with lemon wedges and sliced onion.
