Roth Cookies is a very traditional cookie of Kashmir. It has a prominent place during festivals. This cookie is offered to the goddess of harvest and then consumed. This cookie has a history which goes back to hundreds of years.
- All-purpose flour – 4 cups
- Sugar – 1.25 cups
- Chilled butter cut into small pieces – 2 tbs
- Ghee – 6 tbs
- Brown cardamom powder use only the seeds from one brown cardamom – 1/4 tsp
- 4 tbs milk powder mixed in 4 tbs water
- Water – 1 cup
- Almond halves – 1 cup
- Chopped fresh coconut slices – 1/4 cup
- Poppy seeds – 3 Tbs
How to prepare Roth Cookies
Take a big mixing bowl and add the butter and ghee and cardamom to the flour and mix it. Now add sugar and mix it nicely.
Then add water gradually to make a dough. Do not over knead.
Rest it by covering it for about 10 minutes.
Heat the oven to 375*F
Roll the dough out to the cookie thickness
Cut out the cookies in desired shapes.
Place these moulds on a baking sheet lined with parchment.
Take a sharp paring knife and prick so that they don’t puff up while baking.
Press in the almond and coconut slices over them and brush with a milk powder paste.
Sprinkle some poppy seeds on top to cool lovely.
Bake for 25 – 30 minutes until golden brown on top.
Cool on a wire rack
The Roth is ready to be served. I bet kids will ask for more. You can add any type of nuts to make it taste delicious.
