Mutton Kofta | UP cuisine | Indian Mutton Kofta curry recipe

Mutton Kofta is the lip-smacking spicy cuisine of UP. Made with kofta balls which contain mutton, channa, spices etc.


  • minced mutton
  • egg
  • roasted, ground & sieved chana
  • coriander – chopped
  • poppy seeds – soaked in water
  • a hand full of garlic pods
  • ginger 1 inch
  • finely sliced onions
  • skinned & pureed tomatoes
  • coriander powder
  • turmeric powder
  • Salt – to taste
  • whipped  yogurt
  •  oil
  • Water
  • black cardamoms
  • whole pepper
  • cloves
  • green cardamoms
  • bay leaves
  • cinnamon stick of 1/2 or 1 inch

Mutton kofta Process

  1. In a mixer Grind the poppy seeds, garlic, ginger together.
  2. Add oil in a pan and add the sliced onions to it and fry till they turn brown in color.
  3. Then add some water to it and stir.
  4. In another pan mix the whole spices and one cup of water and simmer for 10 minutes.
  5. In the onion mixture add the grinded mixture of ginger-garlic paste and the poppy seeds and fry for another 2-3 minutes.
  6. Add the 1 tsp of coriander powder, turmeric powder, and salt to taste. Mix gently.
  7. Now add the chopped tomatoes and stir well.
  8. While the mixture is boiling, in a bowl mix the mutton mince, the egg, channa powder and coriander leaves with little salt.
  9. Rub your palms with oil and make small balls (koftas) and keep aside.
  10. Now the time to add them to the onion mixture.
  11. Separate the water from the whole spices then add it to the koftas.
  12. Give time to boil. Cook for about 5 mins and then add whipped yogurt.
  13. Reduce the heat and cook for about 45 minutes.
  14. Garnish it with chopped coriander.
