Masala Channa Veg Recipe is an authentic dish of Punjab cuisine. It is very much served during every meal. It tastes awesome with roti, chapathi, naan, batura, etc. try this recipe and you will love it.


  • water – 1 lt
  • channa – 400 gms
  • tea leaves – 3 tsp
  • bay leaves – 4
  • black cardamoms – 5
  •  cumin powder – 2 tsp
  • kachari powder – 1 1/2 tsp
  •  fennel powder  – 2 tsp
  • anardana powder -5 tsp
  • amchoor powder -2 tsp
  • dhaniya powder(coriander powder) – 1 tsp
  •  red chili powder -1 1/2 tsp
  •  garam masala 1 tsp
  • hing(asafoetida) -1/4 tsp
  • ginger, julienne -5 Tbsp
  •  finely chopped green chilies -3 tsp
  • kasoori methi -2 tsp
  •  lemon juice -5 tsp
  • meetha soda -1 tsp
  • garlic cloves -12
  •  whole green chilies, for garnishing-4
  • Salt to taste
    For masala aloo:
  • oil – 2 Tbsp
  • chilly powder-2 tsp
  •  turmeric powder -1/2 tsp
  •  potatoes quartered -4
  • ginger julienne -50 gms
  •  tomatoes quartered 3
  •  green chillies slit into halves -5
  • Pinch of salt

Masala Channa Veg recipe Procedure:

For masala channa:

  1. At the outset, take a bowl of water and add 1 tsp of soda and soak 400 grams of channa for 4-5 hours.
  2. Make a pouch of tea leaves, add 3 bay leaves, 5 large black cardamoms and put this pouch to boil with a little salt (1 tsp) along with the soaked channa for an hour. Then take off the pouch and save the water.
  3. Blend all the masala, by mixing all the dry items; cumin powder, kachari powder, fennel powder, anardana powder, amchoor powder, dhaniya powder, kasoori methi, red chilly powder, garam masala, salt and a pinch of Hing and take it out in a bowl.
  4. Mix this masala with channa and add little warm water.
  5. Take a pan and heat oil and add ginger- garlic and saute for a while.
  6. Now, add this to the channa and cover it for a while so that the masala blends well.
  7. Boil it for 10-15 minutes.
    For masala aloo:
  8. Heat oil in a pan and add turmeric powder, chilli powder, and ginger julienne and saute.
  9. Then toss the tomatoes, potatoes, green chilies and pour over the channas.The taste will be awesome. Masala Channa Veg recipe can be served with poori, chapathi, roti, naan, anything and everything.
