Kozhikodan Biryani Recipes – Kozhikode is also known as Calicut a city in Kerala . Kozhikodan Biryani is a special biryani of south. Rice cooked with chicken, spices and topped with boiled eggs.

 

Ingredients:

  • chicken legs (small pieces) – 1 kg
  •  rice – 400 gm
  • water (the water is 1.5 times more than the quantity of rice) – 600 ml
  •  green cardamoms – 6
  •  cinnamon sticks – 2
  •  bay leaves – 3
  •  javitri – 3
  •  fennel seeds – 10 gm
  •  onion 200 gm
  •  tomatoes -80 gm
  • green chilli – 20 gm
  •  ginger – 50 gm
  •  garlic – 50 gm
  •  red chilli powder – 50 gm
  • coriander – 50 gm
  •  mint – 30 gm
  •  turmeric – 5 gm
  • Salt to taste
  • garam masala – 15 gm
  •  oil – 60 ml
  • eggs, boiled – 4
  •  butter – 30 gm

Kozhikodan Biryani Recipes Procedure:

  1. In a deep pan pour oil, add whole spices into it and stir a while.
  2. Into it put crushed onions, julienne of green chillies and ginger and saute.
  3. Now add ginger & garlic paste, mint, coriander and stir well and add turmeric, red chilli and fennel powder.
  4. Now add pieces of chicken(marinate chicken for 20 munites with salt ginger garlic paste and turmeric), chopped tomatoes, water and butter.
  5. When chicken is almost cooked, add rice and salt.
  6. Tightly cover and simmer it for a while till done.
  7. Cut each egg into four then garnish on the rice.

Tastes awesome with raitha.
