Keema Dum Biriyani Recipe is typically a dish of Uttar Pradesh. It is served in every Islamic festival. They are very famous. If you are travelling to UP then do not miss to taste Keema Dum.

Ingredients:

  • minced meat – 1/2 kg
  • onions-sliced thinly – 2 cups
  •  ghee  (clarified butter) – 1/4 cup
  • ginger paste – 1 tsp
  • garlic paste – 1 tsp
  • chopped raw papaya – 1/4 cup
  • coriander seeds – roasted and powdered – 1 Tbsp
  • cloves-roasted and powdered – 6
  •  green cardamom- roasted and powdered – 6
  • cumin seeds – roasted and powdered – 1 tsp
  •  pieces of cinnamon – roasted and powdered – 1/2 Tsp
  • Seeds of 1 black  cardamom- roasted and powdered
  • pieces of mace – roasted and powdered – 1/2 Tsp
  •  grated nutmeg – 1/8 tsp
  •  peppercorns – roasted and powdered – 1/8 Tsp
  • mustard oil – 2 Tbsp
  • Salt to taste
  • cloves powdered – 2
  • chopped coriander leaves – 2 Tbsp
  • For smoking:
  •  chilli powder – 1 Tsp
  • a piece of coal – 1
  • ghee – 1/2 Tsp

Keema Dum Biriyani Recipe Procedure:

  1. In a deep pan heat 1/4 cup ghee and fry the onions.
  2. Fry onion till brown and crisp. Remove them and grind it with some water to make it a fine paste.
  3. Now, mix the minced meat with the ginger and garlic paste and chopped papaya.
  4. Add also the roasted and powdered ingredients and the onion paste.Let it marinate for 4 hours.
  5. Heat the oil in a heavy-based saucepan which has a tight lid.
  6. Now, add the minced meat, salt and chilli powder, mix well, cover and cook thoroughly over low heat.
  7. Make sure you do not stir while cooking. let the fat will separate when cooked.
  8. In a small cup place the burning charcoal and put a teaspoon of ghee on it and place it in between the meat.
  9. Place it in a small bowl or in an aluminium foil shaped like a cup.
  10. Place this in the centre of the cooked minced meat, pour the 1/2 tsp ghee and the powdered clove over it and cover immediately.
