Pateesa Recipe is a Kashmir Cuisine which tastes very delicious. Kids will love to eat them and you have to try this at home and let us know how it came out!

Pateesa Recipe Ingredients:

  1.  besan – 100 grams
  2.  maida – 100 grams
  3. Sugar – 200 grams 
  4.  ghee – 250 millilitre
  5. Nuts
  6. Cardamom powder
  7.  vinegar / glucose syrup – 1 tablespoon

Instructions:

  1. Take a wide mouth pan with has thick bottom and heat ghee in it
  2. To this add maida and besan.
  3. Fry till fragrant and colour changes. Keep stirring. Cool to room temperature.
  4. Take a saucepan and add water and sugar bringing it to boil. Do not caramelize it.
  5. To this add vinegar to avoid crystallization.
  6. Boil for 3-4 minutes till single thread consistency.
  7. Grease a pan and place it in another pan with water.
  8. In this water cooled pan add syrup and stir quickly. Syrup will start turning into the semi-solid ball.
  9. Now add this syrup ball in besan and flour mixture.
  10. Add cardamom powder and mix well while stretching the ball.
  11. Once it is mixed transfer this syrup flour ball to the working surface.
  12. Using hand and then rolling pin keep stretching and compressing the dough. Do this while it is still hot.
  13. Spread on the surface with rolling pin and then put nuts over the surface.
  14. Let it cool. Make horizontal and vertical lines using a knife on the surface.
