Gutti Vankaya Kura Recipe | Indian Vegetarian Food Recipes

Gutti Vankaya Kura Recipe is one of the most famous and a “must dish” in the plates of Indian Vegetarian Food Recipes. This is made from Brinjal.   •  brinjals, sliced halfway – 6 medium
  •  refined oil – 4-5 Tbsp
  •  dal chini – 1 stalk
  •  green cardamoms – 4-5
  • cloves  7-8
  •  green chillies, sliced – 2-3
  • cumin seeds – 1 tsp
  •  mustard seeds – 1 tsp
  •  minced garlic – 1 tsp
  • onion, chopped fine – 1
  • turmeric – 1 tsp
  • tomato, chopped fine – 1
  • chilly powder (you could use less chilly also) – 2 tsp
  • coriander powder – 2-3 tsp
  • cumin powder – 2-3 tsp
  •  coconut paste  1 cup
  •  salt or to taste – 2 tsp
  •  tamarind extract – 2 Tbsp
  • Some water
  • Coriander leaves to garnish
  • Handful of curry leaves

Gutti Vankaya Kura Recipe Procedure:

  1. In a pan, deep fry the brinjals.
  2. Take another pan and heat some oil and saute cardamoms, cloves and dal chini.
  3. Now to this pan add the whole spices: green chillies, cumin, mustard seeds and garlic.
  4. Add chopped onions once the garlic turns brown.
  5. To this add the curry leaves and turmeric powder and mix well.
  6. Now add the chopped tomatoes and all the masala, red chilly powder, coriander powder and cumin powder.Mix well.
  7. Then add the coconut paste. Season it with salt.
  8. Cook the masala till the masala is slightly dry consistency.
  9. Now add some tamarind extract into it.
  10. You can add some water if you need liquid consistency.
  11. Finally, add the fried brinjals.
  12. Cook it for about 5-7 minutes in simmer.
  13. Garnish with coriander leaves.
