Undhiyu Recipe | Gujarati Cuisine | Indian Veg Food Recipes

Undhiyu Recipe is a typical Gujarati Cuisine which is made with vegetables and tastes good with rice, roti. It is one of the best veg recipes for Indian cuisine style.

Ingredients:

  • yam- peeled and diced – 100 gms
  • potato- peeled and diced – 100 gms
  • beans- diced – 100 gms
  • raw banana- diced – 100 gms
  • asafoetida – 1/2 tsp
  • whole cumin – 1/2 tsp
  • Oil to fry
  • For the muthiya:
  • chickpea flour – 2 cups
  • kastoori methi – 1 tsp 
  • red chilli – 1 tsp
  • sathri or lemon flower – 1 tsp
  • sugar – 1 tsp
  • oil for binding – 2 tsp
  • Salt to taste
  • cumin – 1/4 tsp
  •  turmeric – 1/2 tsp
  • For the masala:
  • grated coconut – 1 Tbsp
  • coriander powder – 3 tsp
  • cumin – 1/2 tsp
  • fresh coriander- chopped – 1 Tbsp
  • turmeric powder – 1/2 tsp
  • red chilli powder – 1 tsp
  • oil – 1/2 tsp
  • Salt to taste

Undhiyu Recipe Procedure:

  1. In a pan lightly fry all the vegetables and keep aside.
  2. To prepare muthiya, take a bowl and mix all the ingredients.
  3. Now, make small balls from this mixture and fry gently.
  4. To prepare the masala, mix all the ingredients. Keep aside.
  5. Heat oil in a pan and add asafoetida and cumin.
  6. Now add the masala mixture in a pan tand cook for few minutes.
  7. Finally, add all the vegetable and muthiyaballs
  8. Cook for 5-6 munites.
  9. Now Ready for undhiyu Recipe.
