Ennegayi Veg Recipes | North Karnataka Cuisine | Indian Cuisine

Ennegayi veg recipes are nothing but stuffed brinjal is a very famous dish of North Karnataka Cuisine. This will taste delicious with Roti, Steamed Rice.



  • purple brinjals, small – 8
  • onion, sliced – 1
  • few curry leaves
  •  turmeric – ¼ tsp
  • mustard -1 tsp
  •  tamarind juice – ½ cup
  • jaggery (optional) – ½ tsp
  • Oil
  • salt to taste
Ingredients for masala stuffing:
  • roasted peanut / groundnut – 2 tbsp
  •  dry coconut / kopra (or fresh coconut / desiccated coconut) – ½ cup
  • sesame seeds / til – 2 tsp
  • chana dal – 2 tsp
  •  urad dal -1 tsp
  • coriander seeds -1 tsp
  • fenugreek seeds/methi – ¼ tsp
  •  cumin seeds / jeera – 1 tsp
  •  red chillies – adjust to your spice level – 6 -12
  • few curry leaves
  • Oil

Ennegayi Veg Recipes Procedure:


  1. Wash and wipe off brinjals and cut the brinjals in x-shape without taking off the stalk.
  2. Place them into a bowl of water with a table spoon of salt for Stuffing:1. In a pan dry roast the sesame seeds till they change colour and leave our aroma.
    3.Dry roast the coconut till they turn slightly golden brown.
    4. In the same pan add a tsp of oil and fry chana dal, urad dal, methi, curry leaves, coriander seeds, jeera and red chilli.
    5.Blend all the ingredients in a blender along with peanuts and turmeric powder.
    6. Grind it to a fine powder.Stuffing and cooking:
  3. Now, stuff the prepared masalas into the brinjal.
  4. In a cooker add little oil. and put little mustard seeds and curry leaves to splutter.
  5. Now add onions and fry
  6. Carefully place the stuffed brinjals.
  7. To this add salt and tamarind juice.
  8. Add all the remaining masala and some water and close the cooker lid and in medium flame cook for a whistle.Serve Ennegayi veg recipes with anything and everything!! This is certainly a lip smacking dish!
