Egg Curry | Bengali egg curry recipe | Indian egg curry recipes

The simple recipe of egg curry in Bengali Style.


  • completely boiled eggs-shelled.
  • potato, peeled and cut into cubes (1 medium sized )
  • green chillies slit (3 )
  • mustard oil (3 tbsp)
  • turmeric,(1 tsp )
  • Kashmiri Chili powder (3 tsp )
  • onion sliced (1 large )
  • cumin seeds (1 tsp )
  • bay leaf (1 large)
  • dry red chilies (2 )
  • ginger garlic paste (1 tsp )
  • sugar (1 tsp )
  • tomato ketchup (2 tbsp )
  • whisked yogurt (2 tbsp )
  • Coriander-Cumin powder (1 tsp )
  • garam masala(½ tsp )
  • Salt to taste
  • Coriander leaves to garnish

Egg curry Process:

  1. Take all the boiled eggs and make slits on them.
  2. Mix them in a mixture of turmeric, salt, and red chili powder.
  3. Fry them well in 1 tsp of oil.Keep aside.
  4. Next add the chili, turmeric,  salt mixture to the cubed potatoes and fry all this. Take it out from heat, when 3/4th fry is done.
  5. In a heavy bottomed pan, take 2 table spoon of mustard oil. Heat it, then add a bay leaf, 2 pieces of dried red chilies and a teaspoon of cumin seeds.
  6. When the cumin seeds start to splutter, add the chopped garlic and fry but don’t let them burnt.
  7. Add a teaspoon of sugar in the oil.
  8. Next, add the chopped onions and keep on frying till they become light brown. Next, add the chopped chilies.
  9. Add ginger-garlic paste, a pinch of turmeric powder, the tomato ketchup
  10. Next, add 2 teaspoons of Kashmiri chilly powder and the yogurt.
  11. Add 1 tsp of Coriander-cumin powder and fry well, sprinkle some water and fry till oil starts to separate.
  12. Once oil separate, add in the fried eggs and potatoes and mix.
  13. Add Water for gravy measure according to your preference, and salt to taste.
  14. Once it comes to boil and potatoes are well cooked, add a pinch of garam masala.
  15. Garnish with coriander leaves and serve hot with white rice.
