Beetroot Soup | Indian Veg Recipe

Beetroot soup is healthy and very tasty recipe. Beetroot soup is comforting and easy recipe to make on cold rainy days.

Ingredients

  • 1 tablespoon butter
  • 1 bay leaf
  • 1 tablespoon garlic ginger paste
  • 2 shallots, halves
  • cup beetroot, cubed
  • 1 tomato, chopped
  • ½ tablespoon salt
  • 2 cup water
  • 1 tablespoon crushed pepper
  • 1 tablespoon Cream
  • Few mint

Instruction to make Beetroot Soup

  1. First, in a cooker add butter and saute bay leaf until it turns aromatic.
  2. Then add garlic ginger paste, shallots and saute until it shrinks.
  3. Now, add beetroot, 1 tomato, salt and saute for 3 minutes.
  4. Add 2 cup water and cook for 3-4 whistles and drain off the water and cool completely.
  5. Now vegetables into a blender and blend to smooth paste.
  6. Transfer the smooth paste into a large pan.
  7. Now pour water left out while cooking vegetables and mix well.
  8. When the soup comes to a boil add crushed pepper and mix well.
  9. Finally garnished with cream and mint and.
