Baigun Bhajja Recipe | Bengali Recipes | Baingan Bhaja recipes

Baigun Bhajja Recipe is a Bengali cuisine. It is an all time favorite dish. Simple but delicious.

Ingredients:

  • Big eggplants – 3
  • Ginger-garlic paste – 1 Tbsp
  • Red chilli powder – 2 tsp
  • Turmeric powder – 1 tsp
  • Coriander powder -1 tsp
  • Lemons juice – 2 No.
  • Onions, chopped – 2
  • Green chillies, chopped – 4
  • Ginger, chopped – 1
  • Fresh coriander, chopped – 4 Tbsp
  • Mustard oil -1 cup
  • Garam masala powder – 1 tsp
  • Salt to taste

For the tomato chutney:

  • Tomatoes – 3
  • ginger, chopped
  • Green chilli, chopped -1 tsp
  • Coriander, chopped -2 tsp
  • Sugar -1/2 tsp
  • Lemon jice – 1 No.
  • Mustard oil 1/2 tsp
  • Salt to taste

Procedure to make Baigun Bhajja Recipe:

  1. Slice 2 eggplant (brinjal) them in half inch thickness.
  2. Marinate these slices with ginger garlic paste, red chilli powder, turmeric powder, coriander powder, garam masala powder, salt and lemon juice (1 lemon) and keep it aside.
  3. Roast the remaining eggplant in a pan till it is cooked properly.
  4. Once it is cooked, peel the skin off and roughly chop the eggplant into small pieces. Mix in chopped onion, green chilli, ginger, fresh coriander, salt and lemon juice (1 lemon)
  5. In a pan, in medium flame fry the marinated eggplant slices till they are cooked. Cook it with mustard oil
  6. Serve it hot with the roasted eggplant.
    For the tomato chutney:
  7. Boil tomatoes and puree it nicely in a mixie.
  8. Dish out in a bowl and add chopped ginger, green chilli, coriander, salt, sugar, lemon juice (1 lemon) and mustard oil and mix it well.
  9. And now, serve it with the bhajja.
