Avial Recipe | Healthy Kerala Cuisine | Veg Food Recipes

Avial is an authentic and traditional Kerala cuisine. Avial is required in every festival and in a feast called Sadhya. Sadhya is a vegetarian feast served on a banana leaf.  It is one of the healthiest cuisines of Kerala. Now let us try how to prepare Avial at home.


  1. 1 Raw Banana
  2. 1 segment of ash gourd
  3. 1 carrot
  4. 2 drumsticks
  5. 10 beans
  6. 1 cup water
  7. 1/2 tsp salt
  8. 1/2 cup grated coconut
  9. 1 tsp cumin seeds
  10. 5 green chillies
  11. 1 cup yoghurt
  12. 1/4 cup shelled peas

For the tempering :

  1. 1 tbsp coconut oil
  2.  A few curry leaves

How to make Avial :

  1. Peel the banana, ash gourd, carrot and potato. Scrape the drumsticks and string the beans and cut into 2” batons.
  2. Cook the vegetables along with the water, turmeric and salt using the Microwave mode for 6 munites at 850W.
  3. Grind the coconut along with the cumin seeds and green chillies to a smooth paste.
  4. Whisk in the yoghurt.
  5. Add this paste to the vegetables and continue to cook in the Microwave mode for 7 minutes at 650W
  6. In a separate bowl combine the coconut and curry leaves and cook in the Crisp mode for 1 minute. Stir into the Avial and serve hot.

For Avial you can add as many vegetables you want and enjoy the traditional food of Kerala.
